What is the documentary hypothesis and is it true?

They documentary hypothesis is the idea that the Old Testament (particularly the books of Moses) were written during the divided kingdom period of Israel and Judah.  They break down sections known as JEPD; Jehovah, Elohim, Priest, Deuteronomy.  It is believed that each section was added over time and eventually the Old Testament became what we have today.  This theory discredits the fact that God intervened in history, the existence of many pinnacle people, and the scriptures being the true Word of God.  While many “scholars” and atheists believe in this theory, there is absolutely no evidence to support it.  The only evidence they have is hacking the Bible in such a way to prove that they are correct.  This is not evidence.  The earliest manuscripts we have of the Old Testament are complete, it reads as complete, and there is no evidence to suggest that it was not so from the beginning.
